What is TDS?

TDS (Total Dissolved Solids) measures the concentration of minerals in water in mg/L or ppm. For espresso, the ideal range is 75–150 ppm - enough minerals to extract flavour without causing scale buildup in your machine.

Why does water matter for espresso?

Water makes up over 98% of your espresso. Minerals like calcium and magnesium act as carriers that bind to flavour compounds during extraction. Too little TDS causes flat, under-extracted shots. Too much causes bitter, over-extracted shots and damages your machine.

What is pH and why does it matter?

pH measures how acidic or alkaline water is (scale of 0–14, with 7 being neutral). For espresso, a pH of 7-7.5 is ideal. Too acidic water can corrode machine parts; too alkaline can dull the brightness of your espresso's flavour.

What is water hardness?

Hardness refers to the concentration of calcium and magnesium ions. Hard water builds up limescale in machines over time. Soft water under-extracts and produces flat shots. Moderately soft water hits the sweet spot.

What is Third Wave Water?

Third Wave Water is a mineral supplement you add to distilled or very low TDS water to reach the exact mineral profile ideal for espresso or filter coffee. It is the most precise way to control your brew water - popular with specialty baristas and home enthusiasts.
