TDS (Total Dissolved Solids) measures the concentration of minerals in water in mg/L or ppm. For espresso, the ideal range is 75–150 ppm - enough minerals to extract flavour without causing scale buildup in your machine.
Water makes up over 98% of your espresso. Minerals like calcium and magnesium act as carriers that bind to flavour compounds during extraction. Too little TDS causes flat, under-extracted shots. Too much causes bitter, over-extracted shots and damages your machine.
pH measures how acidic or alkaline water is (scale of 0–14, with 7 being neutral). For espresso, a pH of 7-7.5 is ideal. Too acidic water can corrode machine parts; too alkaline can dull the brightness of your espresso's flavour.
Hardness refers to the concentration of calcium and magnesium ions. Hard water builds up limescale in machines over time. Soft water under-extracts and produces flat shots. Moderately soft water hits the sweet spot.
